I'd like to have a lunch truck so I could travel to Pagan events and vend food. Some people just don't like to pack all of their food for a week and hope the ice doesn't run out. Some people don't really know what to do with a camp stove. Some people just don't like to cook, period. Not to mention the fact that some events and retreats don't have a kitchen. I know some do, but the one I went to didn't. We were responsible for carrying our own food with us. We made several trips to the Sprawl-Mart in town, believe me. There was a staff tent where the presenters got fed, but the rest of us had to fend for ourselves.
How are the events you attend? Are there food vendors or is there a meal plan? What kind of rigamarole would I have to go through in order to do this? Besides moving back to the U.S. first, I mean. ;) What sorts of foods to Pagans want? Organic, free-trade, freerange, fresh, lots of veggie options? Talk to me!

CHOCOLATE! Lots of it, that would make any witch happy!
I don't go to lots of gatherings, but usually we bring our own stuff, put everything in a big room/kitchen/cave and mix. Of course, during longer vents you have to buy fresh food eventually, but mostly it ended well - there are always people who like cooking, and for the rest there are other options.
For larger gatherings, I think your idea would be a great opportunity - for the others as well as for yourself. And as to the kind of food... hmm, some pagans I know are Vegetarians, some aren't. Most prefer organic food. Other than that, it's a lucky guess...
(I hate it, though, when I go somewhere and EVERYTHING is Vegetarian or Vegan and if you ask for some meat people stare at you as if you just slaughtered their favorite pony in front of their eyes. But then, I am a wicked omnivorous witch...)
I know lots of pagans are vegetarian...me I am too much of a carnivore to give up meat. That being said, I do prefer to get freerange if at all possible. You can't deny that a better-treated animal has better meat, and it makes me feel slightly better about myself.
I too have not been to many gatherings, not in a decade or so. For other events, vegetarian food, grown without pesticides, is what I go for; however, if one is hungry enough that really wont matter.
This is a great idea, though. So... when are you moving back? =)
